It's become something of a Christmas tradition at the chop house to include this dish on our feasting menu.

Inspired by the legendary Russ & Daughters in New York's lower east side. The mineral tang of the cured salmon works brilliantly with the smoky black pepper crust.

Works best served with creme fraiche and watercress.
