40 million litres of fresh water, filtered through slate, shale and sandstone, pass through daily at the sturgeon farm based at the foothills of Exmoor National Park in Devon.
The fish are grown at a pace at which nature intended in clean, fresh waters before being harvested for the sweet delicate eggs. Cornish Sea Salt is carefully added to further enhance the natural flavours of the caviar specially-selected for The Quality Chop House.
Unlike some caviar farms, the sturgeon meat is used to supply restaurants around the UK to ensure no part of the fish is wasted.
