Iago Bitarishvili probably makes the best Chinuri wines in Georgia. That might sound an obscure claim to fame, but such is the pre-eminence of his wines, every last drop of it is exported. This chinuri (an indigenous varietal) undergoes 6 months of skin contact in amphora, and is delightfully grippy and savoury, with a modern sense of nuance and ripe stone-fruited fragrance.
