Inspired by traditional Sichuan cooking, our take on a spicy fermented pork and beans stew substitutes the meat with fermented mushrooms making this a perfect meat alternative. We finish the stew by adding tofu, giving a silky full-bodied texture.
Serve simply with sticky rice, and fresh spring onions and red chilli.
