After a 5 year stint in the pastry kitchen at St. John Bread & Wine, Lillie O’Brien set up London Borough of Jam in 2011.
Lillie's preserves combine stunning fruits sourced from the UK, Italy, France and Spain alongside interesting pairings that accentuate the core flavour of each jam (blackberry & cacao!).
At her Clapton based shop, she creates preserves set using only natural pectins with shorter cooking times resulting in a more pronounced fruit character that sits above the sugar.
