From South-West France, this vinegar is produced using the oxidized wines of Domaine Plageoles. The "Voile" refers to the thin layer of protective yeast that form over the wine in barrel (similar to Jura and Sherry wines) resulting in soft, nutty and toffee flavours.
Used in cooking this vinegar provides acidity as well as nuttiness. A brilliant pairing to fish cooked in butter or a bitter leaf salad.
